Hi, I’m Nikki, the voice behind the Main Bite! Having spent the majority of my adult life trying to figure out what I want to be when I grow up, I have finally found my place. After being told as a young child that I would not be able to fulfill my dream of being an Indigenous artist (having no Australian or Torres Strait Islander cultural background or heritage, or any real artistic talent), I have since been through many stages and phases trying to figure it all out. Being passionate about food (specifically *eating* food), I have known for quite some time that I wanted to work with food, in some capacity. I completed a uni degree in food science and nutrition, along with a teaching degree, and have been working as a food tech and design teacher in a high school on Sydney’s north shore. And although I love it, my true happiness is in cooking (*eating*) good food! And no bias here..I love healthy, nutritious meals and snacks, I love a good comfort meal…and I really love a great piece of cake. With icing.
Starting the Main Bite has been a long-time daydream that I never thought would actually happen. I have spent countless hours scrolling through my phone, ogling at other people’s food blogs and imagining what I would do if I had my own blog… until one day, I realised that’s exactly what I need! My own little piece of cyberspace where I can share my love of food one bite at a time!
What you will find here on the Main Bite is a variety of foods that I cook at home for my family, from main meals, to healthy snacks, to celebration cakes, and everything in between. With two fussy eaters, who are my harshest critics and I am forever trying to impress, I have tried and tested many recipes that are simple crowd pleasers, requiring minimal kitchen expertise and ingredients you can find in your local supermarket. Although I have a strong background in nutrition and the foundations of food technology, I am certainly no chef!! I value ‘doable’ recipes that don’t require fancy kitchen equipment, and I hope you do too!
